Induction is a fabulous system which doesn't really use any external heat source. Therefore having an extremely high efficiency for cooking! How? Well basically induction is based around Magnetics, whereby the molecules of the pot (iron or some alloy) are agitated and generates the heat almost instantly, hence cutting out any surface transfer and heat loss to surroundings, ingeneuos!
Have been using lesser Zojirushi models and can only sing high praises, wonderful.
